Cupcakes :D

22 Aug

In todays baking tutorial I will teach you in my own roundabout kind of way how to turn these boring ingredients..

Into these all kinds of amazing cupcakes!

  • 100g butter or margarine
  • 100g caster sugar
  • 100g self-raising flour, sifted
  • 2 eggs
  • 1/4 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • Buttercream icing (as seen later)
  • Sprinkles and alike to decorate

Boring things out the way first, get your adult helper to preheat the oven to Gas Mark 4. Then tell them to go away so you can start to make the yummy scrummy cupcakes.

Add 100g of Stork margarine to 100g of caster sugar:

And beat with a whisk until the mixture is light and fluffy…

But if you’re a bit of a tard like me and took the Stork straight from the fridge without letting it melt then simply pop the mixture into the microwave for 30 seconds. Keep on mixing with an electric whisk until it looks something like this:

Add one egg to the mixture and beat the egg in throughly before adding the next and repeat.

Add 1 teaspoon of the vanilla essence (or more if you want the cupcakes extra sweet) and 1/4 teaspoon of baking powder at this point.

Sift in the flour (ugh I wish flour just came sifted) then mix mix mix – it’s best to use a wooden spoon for this as the electric whisk makes the flour go everywhere and you nearly choke to death.

Pour the mixture into paper cases – use muffin cases if you want super big cupcakes (which is what we all want of course) and cake cases if you want some little cute cupcakes. Awww.

Pop the cakes into the oven for 20 minutes or until they are golden and springy to touch.

While you wait for the cakes to bake, it’s time to make the buttercream icing! – which I now have learnt how to do successfully and most likely will be making it every day for a simple snack.

  • 250g melted butter
  • 600g icing sugar
  • 2 tablespoons milk
  • 2 teaspoons pink food colouring
  • 2 teaspoons strawberry flavoring
  • 1 teaspoon vanilla extract

Whisk the 250g of melted butter (pop it in the microwave for 30 seconds) until it’s nice and creamy.

Blend in the sugar – 150g at a time and beat well after each addition.

And eventually you should end up with something like this…

Beat in the milk, keeping the mixture light and fluffy then add in the 2 teaspoons of pink food colouring, 2 teaspoons of strawberry flavoring and 1 teaspoon of vanilla extract. Then ta-da it should end up like this beautiful bowl of buttercream icing mmmmmm…

Take the cakes out of the oven and leave them to cool for five minutes before adding the icing.

While waiting for the cakes to cool take this time to carefully pour in your buttercream icing into piping bags. Then it’s time to twirl and twirl the icing around the whole of the cake about 3 times in order to get the right height – and remember to add a little plop at the end.

Then here is the fun part (well the second most fun part – the first fun part is eating the cake itself) it’s time to add all the extras! – white chocolate stars, hundreds and thousands and pink sparkly things to make your cupcakes look that extra pretty.

Now all there is left to do is to stare at your amazing pretty cupcakes for about 10 seconds then eat them all up!
